A savoir: cette recette est destinée à un marché philippin, très habituée à manger des aliments très sucrés, très salés et très "oily/fatty".

Ingredients: pour 24 jars de 250g environ
• 2,5kg de pleurotes
• 1kg de sucre
• 1L de soy sauce
• 1L de vinaigre
• gingembre
• 3L de l'eau de cuisson des champignons
• 7 petits onions rouges
Instructions
1. Segregate the mushrooms from their stems. Check that there is no bitter mushroom. Cut the big mushrooms. Clean them.
2. Place the oyster mushrooms in hot/boiled water. Cover and let them soak for about 15 minutes.
3. Drain the oyster mushrooms.
4. Strain the water in which you soaked the oyster mushroom and save the quantity you need.
5. In a pot over medium heat, add the water, sugar, soy sauce, cane vinegar, red onions, ginger (chopped pieces and medium pieces), pepper and oyster mushrooms . Add chili for the spicy recipe. Bring to a boil and lower heat.
6. Simmer on low heat for around 30 minutes, stirring occasionally.
7. Remove from heat. Discard the big ginger
8. Discard the medium pieces of ginger and take out the oyster mushrooms.
9. Fill the jar (sterilized before cf preparation of the jar) with oyster mushrooms and then cover with the liquid and onions/ginger/chili.
10. Close with the sterilized cap the quicker you can.
11. Sterilize the jars for 15-20min in a steamer or in boiling water.
12. Allow to cool in upside-down position and then put in the fridge.
